Impact of fermentation conditions on the ester production by wine yeasts

In this work, Fermentis and Vivelys have combined their efforts to understand the analytical and aromatic behavior of different strains of oenological yeast through different fermentation conditions.
The aim was to help winemakers optimise their yeast selection and fermentation control in order to obtain a pre-defined wine profile with higher added value. The main goal is to optimize the production of aromatic molecules of fermentative origin, such as higher alcohols or esters.
